Magney Legacy Ridge Farm: CSA #1 2020 Season
Dear CSA-ers,
The online market is now open with the winter vegetables and farm items we have available. This weeks preassembled bag will contain, Romaine, Tatsoi, Mixed Kale, Parsley, Radishes, and a bundle of Mustards. Orders can be placed between now and Tuesday evening. For those of you new to the market, we do ask for a $20.00 minimum order and a delivery fee of 20% will automatically be added. Deliveries will take place on Thursday afternoon and evening, unless you are a member of Trilogy Sports in Princeton (those will be delivered Friday morning). Many customers who are not able to be home at the time of delivery have found it convenient to leave a cooler where the vegetables may be placed. This will protect them from both heat and cold.
If you’ve followed us on facebook, you’ve probably seen lots of fun pictures of Caroline and Stacy delivering vegetables around the area. This was part of something we called “Random Acts of Vegetables” to help ramp up interest in CSA for the Spring as well as get us out an about in the community. At the Caldwell County library on Friday, Hannah lead an interactive presentation about sustainable agriculture for the Rotary Interact Club, an extracurricular group for homeschool students. Being involved in our community is important to the mission of our farm, and an area we hope to expand on in the future.
On the farm proper, we caught some sunny weather this past week, which is good for the growth of what will be our Spring crops. Many of these are in seedling trays in the greenhouse and will be transplanted outdoors at a time when there is more certainty of warm weather. By the historical numbers, we are still in the danger of outdoor frost until our “Frost Date” mid-March. This is a challenging time to plan, especially with the context of recent years being warmer much earlier. For this reason, we have chosen to attempt outdoor seeding of some of our most cold tolerant crops like radishes, spinach, arugula, and peas. Hopefully fate treats these seeds well and they get off to a good start with the impending rain of the coming week.
Spring Tatsoi Salad
INGREDIENTS
2 tablespoons tahini (see notes)
3 teaspoons light soy sauce
1 garlic clove, nely chopped
1 tablespoon lemon juice
1/4 cup (60ml) peanut oil
2 spring onions
1/3 cucumber, peeled, cut in half, seeded
1 bunch tatsoi, trimmed
200g frozen edamame, thawed, shelled
1 teaspoon white sesame seeds
METHOD Step 1 Combine the tahini, soy sauce, garlic and lemon juice in a small bowl. Add the peanut oil and mix thoroughly until emulsied. Add a small amount of water if dressing is too thick. Season to taste with salt and freshly ground white pepper. Set aside. Step 2 Trim green part of spring onion and discard. Thinly slice white bulb lengthways. Thinly slice cucumber widthways. Arrange tatsoi on a platter and scatter spring onion, cucumber and edamame over, then sprinkle with sesame seeds. Serve salad with sesame dressing. NOTES With its mild mustard avour, tatsoi is generally eaten raw, but may be added to soups at the end of the cooking period. Tahini is a thick paste made from stone-ground sesame seeds. It is available from supermarkets and health food stores. Edamame are Japanese green soybeans still in their pod. They are available frozen from Asian groceries.
Until our “Spring” rotation of vegetables really get rolling, we are harvesting primarily out of our high tunnel greenhouses, where deep winter crops have been growing since December. Some of our strongest vegetables right now are the lettuces, kale, and the watermelon radishes. We hope that you enjoy our selection and venture to try some new things. And, today’s weblog brings you words from our newest vendor….
S & S Naturals is located on a farm in the Mingo Valley in northeast Champaign County. Our products consist of elderberry syrup, tincture, and gummies. We use US dried Elderberries (Sustainably grown, without pesticides, fertilizers, or chemicals) and raw local honey. This spring I am looking forward to starting my own elderberries and adding new products.
Elderberries have many health benefits attributed to its nutrients, which include vitamin A, vitamin E, Vitamin B, vitamin C, carotenoids, amino acids, and flavonoids. Elderberry is also very rich in certain essential minerals such as potassium, calcium, phosphorus, and several anti-oxidants. It has the ability to prevent and treat ailments and disorders of the respiratory system such as common colds and flu, cough, chest congestion, sore throat, bronchitis, and asthma. Elderberries have been used for centuries as a home remedy to treat the cold and flu.
Some of the most important health benefits of elderberries include their ability to boost the immune system function, protect against bacteria and infection, slow down the spread of cancer, moderate the digestive process, prevent the development of diabetes, reduce the pain and speed associated auto immune diseases, help with weight loss, lower blood pressure, and alleviate allergies. Another great health benefit of black elderberry is that it helps in keeping the digestive system healthy. It improves digestion by promoting the secretion of digestive juices, and also prevents ailments of digestive system like constipation.
One of the uses of elderberries is its ability to combat cancer. Some of the physiological reactions in the body leave free radicals as the by-products. These free radicals initiate chain reactions that cause cell division, leading to formation of tumors, which later become cancerous. The high antioxidant in elderberries help prevent the formation of cancerous cells, thereby inhibiting the onset of cancer. Elderberry is also anti-inflammatory in action and thus can be used for treating and preventing inflammation conditions such as joint pains and arthritis.

News From Our Growers:
Carole’s Herbs (CS3 Farms): We have more forage greens – get them while they are available! They blend well in salads and sandwiches with rosemary thyme hummus, your choice of our gourmet mustards or shrubs, and a dollop of one of the tasty krauts from Short Mountain…It’s about time to pick up the last batch of elderberry and fire cider for the season.
Dogwood Valley Greenhouse: I’m suddenly finding myself into the beginning of the spring season. Who knew it would come on this quickly?…
Surprise! The very early perennials are in bloom at Dogwood Valley Greenhouse, and they could brighten your garden too. This week’s beauties include: Lenten rose, wild ginger, green Jacob’s ladder (Greek valerian), lavender woodland Phlox stolonifera, vinca (periwinkle or creeping myrtle), and candytuft. They are all in limited supply, so order early. The weather should be great for planting this week. But warm enough to plant means too warm for daffodils. This will probably be the last week of blooms, but I should have lots this week as they come on fast in the warmer weather. Get yours right away!
Mushamo Valley: Smoked Mozzarella Buns are a little nuggets of cheesy, bready goodness. Soft, tender yeast dough pillows are stuffed with chunks of smoked-mozzarella cheese, brushed with garlic butter, then dusted with Parmesan. When cheese loves bread very much, it’s a beautiful thing…Added The King Trumpet Mushroom this week they are a part of the Oyster Mushroom family. In fact, it’s the largest member of the family! They have a long shelf life and will happily hang out in a paper bag inside the refrigerator for a week, sometimes longer.
Short Mountain Cultures: Offering a range of Hatcher Dairy Milk on SRM!! Includes cream top whole milk, chocolate milk, half and half and heavy cream. Support local milk! Nom Noms Dog Treats: Samples Available this week during order pickup on ‘The Porch’ My name is Sandy, I’ve done dog rescue since I was a kid. I started the dog treat business 6 years ago when all those treats were killing dogs and making others sick. I wanted to provide something safe and tasty to my rescue. Once I saw how much others liked my doggie treats I went into business. I do this to not only make a living but to provide free spay/neuters to cut down on all the dogs who end up in shelters or worse. I love being able to provide healthy, safe, yummy treats while helping the pet overpopulation problem. I make them gluten/wheat free so almost all dogs can eat them. 4 ingredients in each, pure and simple ingredients.

Barring some unforeseen event we will continue our online ordering schedule till late June or early July for a small break. In both April and May we will have a one day pop up Market as follows:
DANNY’S GREENS: All winter it has taken 7-8 weeks to grow the lettuce you get every Friday. This is one of the reasons Danny has only been able to offer a few bags each week. Now that the days are longer and the garden is getting more sunshine the lettuce is growing a little faster which means 1) it will only take around 5 weeks to mature and 2) we can offer more each week.
RICHTER FARMS Well it has finally happened, WE HAVE PORK LISTED!!! I know it has been a looong time but we are getting back on track with our farm. Thank you for being patient as we continue on this farm journey. I have listed chops, ribs, country style ribs, ground pork, mild pan sausage and bacon(very limited supply).

The rain has kept things on the green side and goats are enjoying the green grass as are the chickens. The chickens are ramping up their laying and I’m loving all the beautiful ‘naturally dyed’ eggs in blues, greens, browns and white. We have some lovely beige and blue pullet eggs listed.
Again thank you for your patience and loyalty to the Market and all the vendors, we couldn’t do this without your support.
HORTONS FARM: Baby, it’s STILL cold outside! Even with the overall temperature improved today up here on our hill in Echo the wind is still cold and it bites. I’ve noticed several inexperienced beekeepers asking in social media about whether it’s safe to do hive inspections in conditions like this. The short answer – NO. Even though 60 degree is considered safe to open hives the chill wind can do serious damage to exposed comb.

On a different note, we had a BLAST at a local elementary school talking about honeybees this week. For you teachers out there, Ros loves to put her BA in elementary education and Master Beekeeper certification to use this way.
AVALON FARMS:

Moving time for the girls! They are always excited when we move them to fresh pasture. That’s their egg-mobile in the top picture.
Mobile is the basis of pasture raised poultry. Frequent moves to new pasture keeps them healthy, active and gives them plenty of tasty bugs and plants to eat. It also allows the pasture the time it needs to recover and flourish. This symbiotic sustainable relationship is foundational to pasture raised poultry.
