Champaign, OH: Valley View Woodlands! Much Excitement!
Valley View Woodlands is releasing our 2023 maple syrup production to the market. It was a challenging season because of the early warmup at the beginning of February and an early end to our season the first week in March. We tapped our trees on February 2, a new record early date for us. Our number of gallons produced was slightly below our average over previous years.
We were able to make some golden syrup with our first sap run, followed by amber. In the later part of the season we made syrup that was very dark with robust and smooth flavor. Choose your favorite—golden, amber, or dark—it’s all delicious and a fantastic accompaniment for yogurt, smoothies, pancakes, waffles, cocktails, pies, BBQ sauce (see recipe below).
We accept what Mother Nature gives us each year. And while the amount of syrup we produced this year is not all we hoped for, we are releasing it exclusively to our market members for a week before wider distribution. We are grateful to the support the members have shown us over the years.
Thank you,
Shary and Marc Stadler

Lathemtown Farm Fresh Market: This Week at the Market
Good morning! Things are looking greener here at the farm, and I’m itching to plant! All the seedlings in the greenhouse are getting big and healthy and I’m going to start planting the heartier ones like peas, beans, broccoli, and the greens. I have great success with the tomatoes and may have overdone it a bit so I’ll be selling extra plants in a week or two.
Have a great week!
Farmher Chef Amy
Frontier Farms: Spring has sprung but....

Foothills Market: The Market Is Open!
Ready to try something different? Last week, our Foothills Market managers had a family situation that took us to Minneapolis, and we ate at an Ethiopian cafe while in the city. One of the dishes we tried was Gomem be siga, which was collard greens cooked with beef. It was delicious, although getting used to eating with fingers instead of a fork was quite an experience!
I found a recipe, and the dish seemed to be easy enough to cook at home. I’ve posted the recipe on our website. You can pick up the collards and osso bucco on the market if you’d like to bring a little international cuisine into your kitchen.
We also have our regular offerings on the market, including lots of eggs. Shop between now and 5:00 p.m. Wednesday, and we’ll have your order ready for pickup on Thursday.
Eat something fresh this week!
