If this week had a lesson, it’s that you can’t rely on the weather. Paducah’s and Caldwell County’s Farmer’s Market opening was postponed due to impending thunderstorms, but the rain never came! In lieu of this, our friends at Branch Out were kind enough to invite us to set up for the soft opening of their new restaurant on 713 Kentucky Ave. in Paducah. Be sure to them out if you’re in Paducah; Branch Out specializes in vegan and gluten free foods, and their grand opening scheduled for May 23.
On the farm this week we have been getting our tomato tunnel planted and ready for production. The outdoor plantings of greens are starting to look really good and we’re excited to be able to put some new salad mixes on the site over the next couple of weeks. Seeding of plants in the new greenhouse continues, and we’ve of course been trying our best to work around the rain outside.
Our highlighted vegetable this week is Bok Choy (or Pac Choi). Like Tatsoi, this vegetable is from the Asian Group of Brassica family plants. However, unlike tatsoi that forms a rosette of numerous leaves, bok choy produces few very large leaves with enlarged succulent stems forming a sort of “bulb” shape at the base of the plant. These stems are crisp and delicious with or without their leafy tops. They can be used in raw salads, soups, or stir fries. Customers have told us they are a good “stringless” substitute for celery. We hope you enjoy this vegetable, and you can feel good about eating it because it’s rich in Vitamins C and K.
Sweet-and-Sour Bok Choy
Oyster sauce and a pinch of sugar add caramel flavor and color to the bok choy. A little butter turns the sauce into a glaze. This side would be excellent with a spicy main like a Szechuan-style stir-fry or a chile-laden sauce for meat or fish.
Ingredients
• 2 tablespoons rice vinegar
• 1 1/2 tablespoons oyster sauce
• 1/8 teaspoon sugar
• 2 teaspoons canola oil
• 1 pound quartered baby bok choy
• 1 tablespoon thinly sliced garlic
• 1 tablespoon unsalted butter
• 2 tablespoons chopped fresh basil
How to Make It
• Step 1
• Combine rice vinegar, oyster sauce, and sugar in a small bowl. Heat canola oil in a skillet over medium-high. Add bok choy; cook until browned, about 4 minutes.
• Step 2
• Reduce heat to medium; cover and cook until tender, about 3 minutes. Add garlic; cook 1 minute. Add oyster sauce mixture and unsalted butter; cook, stirring occasionally, 1 minute. Sprinkle with fresh basil.

Spicy Grilled Kale with Parmesan Recipe
Yield: 2 – 4 servings
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes
Spicy and savory kale topped with freshly grated Parmesan and red pepper flakes.
Ingredients:
1 – 5 oz. container of baby kale
1 1/2 tablespoons extra virgin olive oil
1 tablespoon grated Parmesan cheese
1 teaspoon red pepper flakes
Salt (to taste) (optional)
Drizzle of balsamic vinegar or fresh lemon juice (optional)
Directions:
Light your grill. When it is hot, place grill grid on the grill surface so that it can reach the temperature of the grill.
Place baby kale in a large bowl and toss with olive oil. It looks like a lot, but kale REALLY cooks down.
Place baby kale on grill grid as shown. Use tongs to move it around on the surface of grid…keep it moving and don’t leave the grill. In a few minutes it will be ready.
Transfer to serving dish, sprinkle with Parmesan cheese and red pepper flakes.
We are trying to cut down on salt, so I personally don’t add salt, I let the Parmesan lend a dash of salty flavor. Also, you can add a drizzle of balsamic vinegar or fresh lemon juice before serving if you’d like.

Good afternoon!
A note about shiitake mushrooms. Our shiitake mushrooms are grown on oak logs at Sweden Creek Farm in Kingston, Arkansas. They have had an unusually wet and cold couple of months and they anticipate fewer shiitakes will be available this month.

Microgreens are now available from Bell Urban Farm, and Tammy Sue is back with a huge selection of goat milk soaps and other items. They are very mild and smell amazing!

Mother’s Day is Sunday, May 12th. Look around the market and you might find some nice gifts, such as jam, jelly, soap, plants, honey. At market pick up this coming Friday, Maria will be on hand with a wide selection of products, including chocolate covered cherries and chocolate covered strawberries.

Check out the great selection of cheese. Very limited quantities, so get yours now! Search “lettuce” or “onion” to see all the varieties listed this week.

This is barbecue weather! Plan to grill for dinner one day this week by getting some delicious local meat. Lots of great bratwurst, chops, and beef available now.

We have quite a few flower, herb, and vegetable plants available. Use keyword: PLANT to see what we have.

Be sure to SEARCH for your favorite items using the search field. We have over 700 items available now!

Most items are listed by 6pm Sunday, but check back again before the market closes Tuesday night to see if any other items are ready to be harvested for you! Eat fresh! Eat local! Eat for better health!

And save your eggshells throughout the week for the laying hens! :-)

Stones River Market:  THE MARKET IS OPEN, HAPPY MAY!


What are some of your favorite things about the Month of May? Mother’s Day, Memorial Day, Graduations and most definately Strawberries, strawberries and more strawberries! Enjoy 6R Farms and Spring Meadow Farm delicious Strawberries on the market this week. Spring Flowers are always favorite things to see, Erdmann Farm has White Peony Bouquet vase and Dogwood Valley Greenhouse their ‘Garden in a Vase’. News From Our Growers:

Carole’s Herbs (CS3 Farms): This week we have more of our Herbal Power and Chocolate Herbal Bliss Balls available, and the Rosemary Thyme Hummus, as well. Thanks to all for the input on taste and improving consistency! We also have Sunflower Butter for those craving a healthy peanut butter replacement.

In the herbs department, we are adding a Lymph Assist Tea to our lineup. Those who have or know someone with lymph problems know that traditional doctors are at a loss for treatment options, but red clover often does the trick!

Finally, we are trying out a custom tea/herbal tisane offering. We will list the “regular” health concerns, or you can email/message us and describe your concern. We will then work to help you research and identify the appropriate remedy. Please look at our offerings and give us some feedback!

Mo’ Scrubs by Toya has three gift baskets for Mother’s Day, starting at $45. (located in Gift Baskets and Certificates Catagory) each basket includes goodies from Mo’ Scrubs, and a heartfelt greeting card from Granny’s Conversations LLC, which is a local business that makes greeting cards for the soul.

For the ease of the market, baskets come with pre-selected items from Mo’ Scrubs, but can be changed upon request by sending an email to [email protected].

Also be sure to check out new items from Mo’ Scrubs, such as the all natural mosquito repellent, new scents in the all natural shea butters and more!

MARK YOUR CALENDARS: May 22nd we will be having a ‘Meet and Greet’ Our Grower from 4-6:30p. Several of our Growers will have tables set up with items and/or information about them. Last years event was a hit and many have asked for it again.

SPECIAL OPEN HOUSE ANNOUNCEMENT

We here at M@D have supported causes and done fundraisers before, and this week for Open House we’re doing it again, albeit a bit differently. A representative from Fostering Hope. will be present to share information about the many ways they help children and families in the Wiregrass.


Fostering Hope’s mission statement is . . . to support, encourage & assist foster families and children of the Wiregrass.  We want them to be well loved and supported by the community and the Church as a whole.

Foster Care and Adoption is near and dear to the folks at Hortons Farm and this week they’re partnering with Fostering Hope to give a portion of all honey sold at Open House to this fine organization. There will be plenty on hand and we hope everyone will plan to stock up!

Fostering Hope has furnished us with a list of current needs. If you would like to help with any of the following please bring them to the Hortons Farm/Fostering Hope tent on Thursday. Your tax deductable gift will go toward helping a foster/adopting family and children starting a new life.

AVALON FARMS: World Naked Gardening Day!  Nope, Avalon Farms did not participate yet again. LOL  You gotta be kidding me!

Following my foot surgery last week, I’ve had the pleasure of spending a lot of time with my kids and their spouses. They were wonderful helpers and kept the farm alive…and took great care of me! “We” harvested and prepared your orders. Things weren’t done quite the way “I” do them, but “we” got it done. If you happened to have any issues with your produce, please just let me know and I’ll get it fixed. ??

One of the things that “we” did not get done was keep the sugar snaps picked. Once they start maturing they have to be picked or the pods get over mature and lose their sweetness, BUT they still have tasty little peas in them! So this week I’ll be offering SHELLED sugar snap peas.

English Peas are starting to fill out!!! They are such lush healthy plants! It’s so exciting and gratifying when something grows so well. (God’s grace, obviously)

HORTONS FARM “Ditto What She Said”

We did not observe what has come to be known as WNGD either and have made it a point to stay away from websites and social media where it has been celebrated. We did however bump into a list of gardening activities NOT recommended for the first Saturday of every May .

1. Plant Roses
2. Re-pot Cacti
3. Use a Weed Eater or other Power Tools
4. Squat in the bushes
5. Sit on the ground
6. Any type of pruning.
