Orders will be ready for pick-up from 4PM – 8:00PM this Tuesday outside the Downtown Russellville Train Depot. Your order will be brought to your car in full-service fashion!

What a week! We at Foothills Market hope you all made it through the winter weather without too much inconvenience. Unfortunately, the record-setting cold weather was really hard on the outside crops. There is still snow in some places, making it hard to know exactly what’s there. It’s likely we won’t have many vegetables on the market for a few weeks, while we start over and wait for spring vegetables to be ready.

We do still have the other items – eggs, meats, baked goods, and sweet spreads. Browse the items on the market between now and Wednesday at 5:00 p.m. Place your order and we’ll have it ready for pickup Thursday between 4:30 and 5:30 p.m.

Hello everyone. Are you tired of the snow yet. We are ready for spring. We have started several plants via seeds. We plan on having Brocolli, Cauliflower, Brussel Sprouts, Kale, Cabbage and Napa Cabbage for sale this spring. We will also have seedlings and plants for sale this year.

Wow! What a week of winter weather. For most of us, this was the most snow we’ve ever had in Conway. I’ve been in contact with several of our Growers and they are working hard to protect their animals and crops. The extreme and prolonged freezing temperatures wreak havoc on farming operations, the real extent may not be apparent for several more days. Time to stock up on eggs, meat, coffee, etc. All the good stuff.

Our girls from Flourish have made it possible to order those BEAUTIFUL Proteas from the Hawaii Flower Farm, while Rebekah is there, experiencing and researching.

I can tell you that these flowers are exquisite, vibrant in color, and bring complete amazement, day to day, as they each open up, in their own way.

They are very limited in quantity, so don’t miss out!!!

Welcome a NEW Grower to the Market: M&S Farms Angus Beef Producers from Cannon County. We provide top quality angus beef with no growth hormones ever. Our cattle are grain and grass fed throughout the entire process. We only sell Grade A Prime Beef. We are USDA inspected and Certified Natural Grown. We also have our Tennessee Department of Agriculture permit. We let the taste speak for itself. Give us a try, I promise you will not be disappointed. Your taste buds will thank you. God Bless.

Quarter Spring Farm:
Happy chickens taste better. Pampered goats make better soap. By supporting our farm, you are helping support local agriculture, keeping your dollars local, and acting as an environmental steward. Plus, you will eat well and smell great…and everybody loves that.

Simons Co. Elderberry:
I will be unavailable the first two weeks of March so be sure to stock up with our Elderberry Syrup. This time of year is when our body defenses tend to get down, you need to defend it by building up your immunity using our Elderberry Syrup, your health will thank you later.

Enjoy our Herbal tea blends for sipping. My current product line includes herbal tea blends and herbal steams. During the ‘cold’ season our Blend of Ah Shoo, Rooted, Shoo Flu, Shut it Down, The Daily teas will help your immune system.

Barefoot Acres Herbs:
Find our products in the Herbal Healing Category. Newly added: MINERAL TOOTH POWDER (Soap and Skin Care/Toothpaste) This week I’ve added ELDERBERRY SYRUP in Pint Jars. We grow the Elderberries we use, includes organic oranges, echinacea and rosehip, cloves, turmeric, ginger and cinnamon sticks, cardamom and peppercorns, local honey and filter water. Enjoy a bit everyday for good health or pour over pancakes!

Mama D’s Bakery:
Hi everyone! We have added Crusty French Bread this week! It goes great with those winter comfort food meals of warm soups and stews or anything with a good sauce, gravy, or olive oil for dipping! We also have everything else available this week! We have Organic White Wheat Bread, Mocha Muffins, Chocolate Swiss Roll, Cinnamon Rolls, Caramel Apple Cinnamon Rolls, Blueberry Lemon Yeast Rolls, Banana Bread and Pumpkin Bread (with the option of nuts or not), Bagels (plain, cinnamon raisin, blueberry, and everything), Donuts (cake and yeast), Cream Cheese Danishes, Pies(chocolate fudge, pecan, chocolate chip pecan, pumpkin and sweet potato), Cookies, Granola and Protein Bars, Yeast Breads, Sourdough Breads, and Fruit Scones. Thanks so much to everybody for your business!

Sow’s Ear Piggery:
We have added several new, whole cuts, including pork shoulders, whole belly, and whole boneless loin. Ground pork, sausage, and bratwursts are also available. As always, our pork comes from free-range, non-GMO, non-corn, non-soy pigs.

Carole Herb’s (CS3 Farm): We made it through the ‘snowapocolypse’ we have carob balls, roasted red pepper hummus, and ginger fig shrub concentrate, Hot Thyme Red Wine mustard, dried wild oyster mushrooms, and winter salad. Remember that our products will be on vacation next week, so stock up this week.

Sassy Cassies:
We have a new special this week. Free order of Ham and Swiss Sweet Potato rolls with the order of 2 casseroles or soups (or combination casserole/soup). They are good with soup, for breakfast, brunch or lunch. (6 rolls in an order) By request we will be adding larger size entries soon.

Over the next few weeks I will have some delicious recipes that can be made using our Mushrooms.

Air Fry Buttermilk Fried Mushrooms
This Buttermilk Fried Mushrooms recipe is about to revolutionize your vegetarian cooking. With fried oyster mushrooms and a crunchy coating, it tastes just like fried chicken!
Prep: 30 mins
Cook: 15 mins
Total: 45 mins

INGREDIENTS
2 heaping cups oyster mushrooms
1 cup buttermilk (Vegan Option; soy or almond milk with squeeze of lemon or splash of vinegar, it will not be as thick as buttermilk, you will not need as much)
1 1/2 cups all-purpose flour
1 tsp each salt, pepper, garlic powder, onion powder, smoked paprika, cumin
1 Tbsp oil*
INSTRUCTIONS
Marinate: Preheat air fryer to 375 degrees F. Clean mushrooms then toss together with buttermilk in a large bowl. Let marinate for 15 minutes.
Breading: In a large bowl combine flour and spices. Spoon mushrooms out of the buttermilk (save the buttermilk). Dip each mushroom in the flour mixture, shake off excess flour, dip once more in the buttermilk, then once more in the flour (in short: wet – dry – wet – dry).
Cook: Grease the bottom of your air fry pan well, then place mushrooms in a single layer, leaving space between mushrooms. Cook for 5 minutes, then roughly brush all sides with a little oil to promote browning. Continue cooking 5 to 10 more minutes, until golden brown and crispy-(or cooking spray) This will make 1 serving.

Sherry and Brie Mushroom Bisque
Makes 8 Cups
1 Pound Oyster Mushrooms
2 cups Dry Sherry (Cooking Sherry Optional)
1-1/2 TBLS Unsalted Butter
1 Pound Brie Cheese Rind Removed and Cubed
½ C Minced Shallots
1 TBLS Freshly Squeezed Lemon Juice
2 TBLS Flour
4 C Beef Stock
1-3/4 C Half and Half
½ Tsp Freshly Ground Black Pepper
½ C Roughly Chopped Chives for Garnish
Kosher Salt and Freshly Ground Pepper to Taste
In a small sauce pan reduce the sherry to 1 cup and set aside. In a medium sauce pane over medium high heat melt the butter and add the mushrooms, shallots and lemon juice and cook for 4 minutes, stirring constantly. Remove from heat and add the flour and stir until completely incorporated. Return the mixture to heat and add the beef stock and reserved sherry. Rias ether heat to high and bring to a boil. Reduce heat and simmer for 15 minutes. Add the brie, stirring until the cheese has melted. Add the half and half and pepper and continue to simmer without boiling for 5 minutes. Taste for salt and pepper. Use an immersion blender to bring to a final consistency. (A REGULAR BLENDER WILL WORK JUST USE CAUTION WITH HOT LIQUIDS) Ladle into separate bowls and garnish with chives. Add some crispy bread and enjoy!!

Warm up with our HOT Pepper Jams:…Ghostly Pear Jelly it is milder than or other pepper jams, Habanero Peach, Jalapeno Cowboy Candy, these all go well with our Cast Iron Skillet Cornbread’s they are great for spicing up many things! Christmas Jam (because it contains Fresh Cranberries + Strawberry) not just for Christmas its delicious anytime, Almost Seedless Blackberry and Black Raspberry, Blueberry Jam, Wild Fox Grape and Pomegranate. MARY’S PEEPS IS BACK

After a long absence we are pleased to announce that Mary’s Peeps is returning to Market at Dothan.

For those of you who aren’t familiar with Mary Dale Peoples, she is a kind, amazing woman who can do anything she puts her mind to. The number one thing she puts her mind to is taking care of her family; kids, grandkids, inlaws, outlaws, and mostly her husband and mother. She has baked for them many years and has a wealth of experience.

The family has been through a lot the last couple of years and though she’s been absent, she’s always been close. We’re thankful she’s able to get back in the swing of things by listing her two classic pound cakes and hope you’ll take advantage!

A Little Culinary Inspiration

Roasted root veggies

As far as roasted root vegetables, there is SO much room for creativity. We chose this photo because it’s just a little different than your standard kitchen blog photo of before and after roasted vegetables. The open bulbs of garlic and fresh herbs (which would be very shriveled had they cooked with everything else) is just . . . pretty. But it does lend to some thinking outside the box.

We’ve had some nice root vegetables on the Market lately – beautiful carrots and beets, and while butternut squash is not a root veggie, it cooks real well with them!

Back to that outside the box thing . . . there’s no “wrong” way to roast vegetables, and there are some great things to try if you are tired of just tossing a few items with Olive Oil, salt and pepper before popping it in the oven. We’re giving you TWO lists – one of veggies you can throw in your mix, another of seasonings that might be fun to try.
