Scalloped Sweet Potatoes

Now THIS is the way to eat sweet potatoes!

Serves 8 to 10
Cooking spray or butter
2 cups heavy cream
2 tablespoons unsalted butter
2 cloves garlic, minced
1 bay leaf
1 teaspoon fresh thyme leaves
1/4 teaspoon ground nutmeg
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 pounds sweet potatoes (about 4 to 5 medium), peeled and sliced into 1/4-inch thick rounds
1/2 cup shredded Gruyère cheese

Arrange a rack in the middle of the oven and heat to 400°F. Grease a 9×13-inch baking dish with butter or cooking spray; set aside.

Place the cream, butter, garlic, and bay leaf in a small saucepan and bring to a simmer over low heat. Meanwhile, combine the thyme, nutmeg, salt, and pepper in a small bowl.

Evenly distribute about half of the potatoes over the bottom of the baking dish. Sprinkle with half of the salt and herb mixture. Add the remaining potatoes in an even layer. Sprinkle with the remaining seasoning.

Remove the bay leaf from the cream and discard. Pour the cream and garlic over the potatoes. Push down to submerge them as much as possible. The potatoes won’t be fully submerged — that’s okay. Cover tightly with aluminum foil.

Bake for 15 minutes. Uncover and bake until the sweet potatoes are tender, about 15 minutes more. Remove the baking dish from the oven. Turn on the oven’s broiler. Sprinkle the cheese over the top of the potatoes. Broil until the cheese is melted and the top is lightly browned, 3 to 5 minutes. Let the sweet potatoes cool for about 10 minutes before serving..

Hello!

There is still time to place an order before tomorrow night – lots of good stuff available on the Market for your Thanksgiving Day needs! We have added beautiful and delicious Sugarloaf radicchio to the market page, so if you are a fan of chicories make sure to head over and get your self some!

Please remember that Wednesday at pick up we are hosting a food drive for The Nashville Rescue Mission!

They feed thousands of homeless people and families on Thanksgiving. This year, due partly to the unseasonably warm weather and also probably due to our preoccupation with the election, food donations for their Thanksgiving meals are way down. We recently read that they are in dire need of turkeys as well as canned vegetables. If you feel so moved, please consider donating a turkey or a 10 gallon can of vegetables (which is what they prefer, but small cans will also suffice).

This Wednesday at pick up, please bring your food items and Tally will deliver them to Nashville Rescue Mission on Thursday.

If you are unable to do this, you can also make a monetary donation on their website, nashvillerescuemission.org

We are all in this together, and we need to show our support for one another more than ever!

SUGAR PIE BAKERY!

As I stood in Kim Davis’ bright kitchen, watching her make 9 cinnamon streusel coffee cakes to deliver with many other goodies around town, I found myself unable to stop smiling. Or smelling. Goodness, that scrumptious smell followed me to my car! This mother of four had everything set up so conveniently, and could talk so freely about her goals, it was impossible to believe she would not be completely successful!

Kim and husband Ben, who is a trained chef, have both worked in the business for years, so it was only natural they’d eventually start their own bakery. When a Gettysburg baker taught her to make marbled fondant for her sister-in-law’s wedding cake, Kim admired the way this woman taught classes and made her living creating baked goods from her home-based business, while being so open about sharing her knowledge with others – including Kim!

Her goal ever since? To own her own business – what could be better than setting your own hours and being your own boss while doing what you loved? And Kim has always loved both the beauty and creativity of desserts. While she enjoys cooking, she says she loves how baked goods can be pretty, unique, AND taste amazing! She worked at a restaurant in Versailles, and decorated the dessert plates with delicious sauces – that yummy artistry is what draws her to baking.

She may be very content with baking from home for now, but Kim envisions a beautiful building for their restaurant where she and Ben could make their vocation their vacation, creating desserts both gorgeous and delicious that will set them apart.

Sugar Pie Bakery makes weekly deliveries to Haren’s Market, Troy Bulk Barn, Bakehouse, Sunset Meats, and Winner’s Meats, as well as filling custom orders from Facebook and phone customers.

My three-year-old took his first bite of Kim’s incredible peach pie with that signature pastry crust, and queried why Mommy hadn’t ever made him one, while my silent husband nodded and gave me that, yeah, how come? look. She had my five-year-old ready to go out and plant a peach orchard.

You have to admire someone who obviously loves what she does, and has such a clear vision for the future. And just wait until she can offer her beautiful cheese Danish, cheesecakes, pumpkin pies, and more when the fridge is in place for the market!!

As of this writing all Eggs are Sold Out! I have contacted our Farmers and have asked that extra be sent if they are available. This is ONE example of the result of inconsistent ordering! The amount of Eggs that we were ordering dropped dramatically. Chickens were still laying Eggs – Farmers need to sell those Eggs (or Milk or Meat or Veggies or Baked Goods) – if we cannot support them, someone else will! When I send the reminder email on Thursday, I will let each Market know how many Eggs will be available on Table Sales! They will be sold on a First Come, First Served basis only!


Cow Milk and Goat Milk

For those of you who order Raw Cow MILK, (for your Pets!) Sam makes a 375 mile round trip to ensure that we have fresh milk. Our milk orders are down drastically from last year and this is becoming a burden to Sam. Financially it is not sustainable. Consistency in ordering is important!


Goat Milk will NOT be available until December!

Hi from the farm,

The above freezing weather continues this week, but I see on my weather app that we have a freeze coming Saturday. So with a freeze, the cilantro will be gone. If you like the cilantro you may want to order extra this week!

Also, I will not be open this next Thanksgiving week. I wish you a Happy Thanksgiving!

The bread stores nicely in the freezer, you may want to order extra :)
