Magney Legacy Ridge Farm:  Winter CSA #3


Dear CSA-ers,

This week’s online market is now open at (https://magneyfarm.locallygrown.net/market). Here you can order a custom CSA bag assembled from the seasonal vegetables of your choice. Online payment is fully implemented, and we’d like to thank the couple of early birds that helped us identify and correct an issue with the site last Sunday. Thanks for reaching out; you rock! For those of you who liked the system from last year, we are still offering a preassembled bag listed simply as “CSA Bag Complete.” This week it contains Red Cross Letuce, Broccoli, Spinach, Collard Greens, Kale, and Dill. If you’ve yet to explore the new site, we humbly invite you to do so.

This last week marks the first week we’ve experienced really troublesome weather. Our outdoor winter brassicas like Romanesco and Brussel Sprouts really took a beating on Wednesday and Thursday. All of the larger heads are showing rust-brown frost injury, though some of the smaller, more protected Romanesco still look healthy. For this reason, the suitable heads will be offered as a per pound item this week to account for their smaller size. Unpredictable brutal extremes of weather are one of the things that make farming so challenging. This past week we experienced record low temperatures, and this coming week we are seeing temperatures so high, our indoor tunnels will have to be fully vented for the first times in months.

The good news is, these indoor tunnels weathered the cold beautifully. The belle-of-the-ball crop right now is our Red Cross butterhead lettuce. Our coworker Caroline identified this variety as a type best suited to winter growing. Likewise, Red Cross will be a winter season exclusive. What an absolutely spectacular plant it is though! The whorls of brilliant red outer leaves seem to dance in whorls around its tender verdant heart. As a butterhead, the leaves are thick and melt-in-your-mouth delicious. Definitely consider giving this special lettuce a try.

Shhhhh…yes, I know…you are all watching the Super Bowl, having fun, kicking it up with whichever team you are for!!

Me? Well…my team is not in the game. They wrongly lost to the Rams, but hey, I’m not bitter or anything…but, my Saints should be playing!!

Anyway…moving onto the sunshine vibes of the day. Did you get to enjoy the incredible day?? I sat in the sun, snapped beautiful sunset pictures, and let me tell you…my mood is SO elevated!! Just that shot of sunny Vitamin D, and I am a WHOLE new girl!!

So…while you all are watching the game, I am going to wait until halftime to catch the band, but first, I am going to place my market order!!

Hello!
Hard to believe that the temperature will reach 70 this Wednesday, February 6th. I’m not complaining. Last Wednesday the high was 28. It occurred to me that if it had been a delivery day, would I consider cancelling due to the possibility of some veggies freezing. One time at my old farm, Tally and I were packing the orders. It was windy and below freezing. We were trying to dunk lettuce heads in a tub of water to clean off the dirt. Before we could put the lettuce into a bag, the outer leaves would freeze. It was pretty amazing. We had to cease with the washing. Hopefully, I won’t have to make that kind of decision this year. One option would be to keep the orders in the van with the engine running. I know the driver would approve of that plan.

There is a nice selection and a good quantity of greens and veggies this week: lettuce, baby beets, cabbage, Asian greens, spinach. Some of you were beginning to sport an orange complexion due to the lack of greens and the abundance of carrots. If something sells out, be sure to write in the Comment section what you would like if more becomes available.

Roasted Beet and Carrot Salad with Watercress
1 pound beets, peeled and cut into 1/2-inch thick wedges
1 pound carrots, peeled and cut on bias in 1/4-inch-thick slices
3 tablespoons extra virgin olive oil
salt and ground black pepper
1/4 teaspoon sugar
2 tablespoons white wine vinegar
1 teaspoon TruBee honey
1 medium shallot, minced (about 3 tablespoons)
6 ounces watercress about 4 cups (or substitute if unavailable)

1. Adjust oven rack to lowest position, place large rimmed baking sheet on rack, and heat oven to 500 degrees. Toss beets and carrots with 2 tablespoons oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, and sugar in large bowl. Remove baking sheet from oven and, working quickly, carefully transfer beets and carrots to sheet and spread in even layer. (Do not wash bowl.) Roast until vegetables are tender and well-browned on one side, 20 to 25 minutes (do not stir during roasting).
2. Meanwhile, whisk remaining tablespoon oil, vinegar, honey, shallots, 1/4 teaspoon salt, and 1/8 teaspoon pepper in now-empty bowl.
3. Toss hot vegetables with vinaigrette and cool to room temperature, about 30 minutes. Stir in watercress, transfer to serving platter, and serve.

Hi All, Just want to share that I have been getting back into fermenting again. Let me know if you are interested in getting fresh cultures for Kombucha, Milk Kefir, or Water Kefir. My Kefir grains especially have been growing fast. The Kombucha scoby is a little slower about it.

Please let me know what micro greens or shoots you are interested in and I can start growing enough to make them available (most take less than 2 weeks.)
Also, if you want me to list super foods like Purslane, let me know, I have it volunteering wild here and I will likely also have nettles come winter/spring season.

Foothills Market:  The Market Is Open!


Foothills Market is open with a selection of fresh lamb from Sheepy Hollow Farm. We’re offering a variety of cuts you can’t get in a grocery store around here, from ground lamb, to rib chops, to leg of lamb roasts. Of course, we also have beef and pork, as well.

Our vegetable offerings are limited as we enter into late winter, but remember that growers may update quantities midweek as they are available. We still have baked treats and candy, as well as fresh eggs from free-range hens. Shop the market between now and Wednesday at 5 p.m. Click the button to place your order, and we’ll have it ready for pickup on Thursday.

Good afternoon.

Atlanta is jammed full of people here for the Superbowl. I’m so glad that we aren’t having an ice storm like we had the last time Atlanta hosted the Superbowl. It was January 30, 2000.
Our power went out for awhile, and we were afraid it wouldn’t come back on before the game. Thanks to the expert Georgia Power workers, power was restored in time for us to see the St. Louis Rams victorious over the Tennessee Titans.

Who are you rooting for today? We wish our Atlanta Falcons were contenders again, but all of us at our house are cheering for the L.A. Rams. Hey Falcons there’s always next year.
