Oakview Farm:
This week we have fresh baby kale, arugula, chicken/duck eggs, and a variety of jams on the market this week! Our newest “winter” jam is made with the rosemary in our garden that refuses to go dormant! It’s our Cranberry Rosemary Tangerine Marmalade and it’s delicious! Each small jar of jam has a great tangerine and cranberry flavor, with undertones from the rosemary. Give it a try on toast, grilled pork, crackers and biscuits.
Carole Herbs (CS3 Farm):
We have a new batch of ginger fig shrub concentrate, as well as winter lettuce and pea shoot microgreens.
Use our shrub concentrates as a refreshing drink, mixer, or salad dressing. Our winter lettuce mix is a blend of soil-grown seasonal greens, including a variety of lettuces and baby kale, spinach, radicchio, endive, and other tender green leaves, as available. Top them with fruit and nuts, some sauerkraut, or your choice of dressing. Our pea shoot microgreens are soil grown and sun – fed in the new greens growing area of our home. They do well on sandwiches and in salads or even stir fry and have way more nutrients than most other green vegetables.
Mama D’s Bakery:
Hi everyone! We have everything available this week! We have Chocolate Swiss Roll, Cinnamon Rolls, Caramel Apple Cinnamon Rolls, Blueberry Lemon Yeast Rolls, banana breads and pumpkin breads (with the option of nuts or not), bagels (plain, cinnamon raisin, blueberry, and everything), donuts (cake and yeast), cheese Danishes, pies (chocolate fudge, pecan, chocolate chip pecan, pumpkin and sweet potato), cookies, granola and protein bars, breads, and fruit scones. Are you stuck inside or having a hard time finding a ‘Get Well, Thinking of You’ type gift for someone, I create cactus and succulent gardens. Each design is unique, no two are exactly alike. Planters and designs vary in size from extra small to large. If you have a special container you would like me to use, I can also do that. Prefect for that someone you can decide what to give them, these will brighten their day every day of the year. Easy to maintain, I include directions.
Sassy Cassie: Warm these cold days up with from our New Soup Collection (find in Frozen Meals), Available this week 4 Creamy base soups and 3 that are Dairy and Gluten Free. Available in 32oz. containers. Comes frozen, store for 2 months or heat right away. Serves 2-4. Enjoy a bowl of our delicious soup with our casseroles, great way to get through this winter days.
Jillian Faith Art:
Having a hard time finding a gift to cheer you or someone spirts up during these cold winter days. I have several Original Water Color prints available. Prints will come inside a protective sleeve with a foam backing (which is not attached) to ensure each print stays protected and have a few already in frames
Sow’s Ear Piggery: we have stocked newly processed pork with updated quantities and new products. New this week: Top Round Roast, Tenderloin, and Boston Butt. Also available: ground pork, chops, bratwursts, cutlets, and more! More new products to be listed in coming weeks. As always, our pigs are free range heritage breed, and fed non-GMO diet.
Barefoot Acres Herbs:
I make salves, herbal teas, and tinctures. I grow all the herbs used in my products except for CBD, which is grown locally by a friend. Find our products under the Herbal Healing Category in Herbal Healing Salves and in Tinctures. Newly added: MINERAL TOOTH POWDER (Soap and Skin Care/Toothpaste) just makes your mouth feel good. It is made with bentonite clay powder, baking soda, pink Himalayan salt, our own peppermint and stevia herb, organic cinnamon powder, whole crushed cloves, and activated charcoal. Simply dampen your toothbrush (shake off excess water) and dip it in the powder. As you brush it will feel more like toothpaste. Brush as usual.
RC Farms:
We are new to the ‘Internet’ marketing concept, please bear with us while we figure things out. We are a Middle Tennessee Family Farm that is rooted in family history and growing for over 50 years. We pride ourselves in serving our local communities with Fresh Pesticide Free Produce, soil produced as well as hydroponically produced. We have Smoked Meats and Grass Feed Beef available in different options as well as a variety of Jams.
Dogwood Valley Greenhouse: I have a variety of houseplants available this month, including Rex begonia, large Citronella, Aloe Vera, and a selection of African violets which will vary from week to week. Watch for some new hanging basket houseplants coming soon. It will not be long till the first perennials will bloom!
Quarter Spring Farm: can help you keep your resolutions this year. Our tasty, all-natural birds are great for you. And our goat’s milk soap is great for your skin. If you resolved to be more stylish this year, check out our reusable cloth napkins. Start your year off right with a gift for yourself or a friend from your friends at quarter spring farm.
The Flour Girl: I hope everyone had a great time celebrating the holidays. Getting back into the swing of things after the holidays is hard. Consider trying some of my gluten-free bread and blueberry muffins this week for an easy breakfast or snack. Both are some of my best-sold gluten-free items. As always, thank you for supporting my business!
Flying S Farms:
This week produce available include; Sweet Potatoes, Turnips, Winter Squash: Red Kuri Hubbard, both delicious as a side dish or pies!, along with Acorn and Butternut Squash.
Processed items: Assorted Friendship Breads, Pumpkin and Orange Cranberry Breads, Brownies and Lemon bars, Pumpkins Cookies will be available for a couple more weeks. Artisan Breads…OLIVE BREADS are back! Biscuits (Sour Cream or Buttermilk, also I’m happy to freeze them for you). Cast Iron Skillet Cornbread with White or Yellow Corn. As well as our Sour Dough Breads in loaves and rolls. Need Jams? Warm up with our HOT Pepper Jams:…Ghostly Pear Jelly, Seriously HOT Strawberry, Habanero Peach, Jalapeno Cowboy Candy, these all go well with our Cast Iron Skillet Cornbread’s they are great for spicing up many things! Christmas Jam (Cranberry + Strawberry), Almost Seedless Blackberry and Black Raspberry, Blueberry Jam, Wild Fox Grape and Pomegranate. We are always Jammin’ so be sure to check back. Hello friends!
We will have lots of suet cakes on the extra table this Friday for one dollar each. Feed the birds.
Now is the time to be planning your garden and acquiring seeds. I’ve been talking with several of our Growers and they have big plans for this season. Looks like we will have some amazing things in 2021! Check out the featured items this week.
Elephant Garlic plants are now available from Cedar rock Ridge. They like full sun and rich soil. Plant now and harvest in early June.
Be sure to SEARCH for your favorite items using the search field. For instance, type in the word “sale” or “pork” and see what pops up. We have over 475 items available now!
Most items are listed by 6pm Sunday, but check back again before the market closes Tuesday night to see if any other items are ready to be harvested for you! Eat fresh! Eat local! Eat for better health!
And save your eggshells throughout the week for the laying hens! :-)

BITES OF MANY SORTS
This week I thought I would share some basic Egg Bite info, a recipe if you will, that I’ve been using since last summer when my mom introduced me to them. Her very Italian recipe is listed in a previous newsletter and I’ve had fun ever since experimenting with flavors, seasonings and ingredients.
The beauty of an egg bite is its simplicity, basically a mini quiche that can be made ahead and stored in the refrigerator for a quick healthy breakfast or anytime pick me up snack. They can be as lean or as fatty as you like, keto or carb rich, vegetarian or meat lovers. They keep in the refrigerator up to 10 days, travel well and are a fun addition to breakfast gatherings.
For the record this is old style grandma cooking where you use a bit of this and a pinch of that. I never measure.
First off – pans. If you use a muffin tin or 4 oz mason jars you’ll have to grease them for the bites to come out. Silicone molds eliminate the need for that and has become my preference as they don’t brown or crisp as easily.
Basic recipe: 6 or 7 eggs
a generous handful of your favorite shredded cheese
about a teaspoon of salt (I like pink salt)
a good shake of pepper
(optional) a couple tablespoons of milk, cream, or sour cream.
This alone makes a great basic no nonsense egg bite. Cook at 350 till a toothpick comes out clean, about 20-25 minutes. Test with a toothpick.

The fun comes in with additional ingredients and is only limited by your imagination: What follows are some I’ve tried and will use again:
chopped bacon | wilted kale | finely chopped onion | |
chopped ham | wilted spinich | black olives | |
sausage | mushrooms | chopped peppers | |
pepperoni | cooked asparagus | chopped roma tomatoes | |
canned salmon | artichokes | basil, organo, thyme, etc | |
Italian Sausage | chopped onions | capers | |
Anchovies (sparingly!) | blue, swiss or feta cheese | specialty olives |
The beauty of this method is that the flavor combinations are only limited by your imagination. If you know of a great ingredient not listed here speak up because it’s definitely worth trying!

Thankfully it was a false alarm however Danny has decided to give his beds a chance to grow a bit more before relisting and will have product available next week. The young chickens at Horton’s Farm have started laying like crazy and we find ourselves overrun with eggs. So we’re running a special on eggs this week. For health and safety, our eggs will not be handled for 48 hours prior to Market delivery.

Hopefully 2021 will be a better year once it gets rolling. In the meantime, we’ve been placing seed orders and dreaming of the bountiful garden we’ll have for you this spring and summer!
