Recipes
Lettuce Salad with Strawberries, Feta and Almonds
INGREDIENTS
2 teaspoons Dijon mustard
1 teaspoon honey
1 small shallot, minced
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil
Salt
Freshly ground pepper
12 cups lettuce, torn to bite size pieces (about 6 ounces)
1 quart strawberries, hulled—small berries halved, large ones quartered
4 ounces feta (preferably French), crumbled (1 cup)
1 cup toasted almonds, chopped
In a small bowl, stir together the mustard, honey, shallot and vinegar. Stir in the olive oil and season with salt and pepper.
Put the lettuces in a large bowl. Add the strawberries, feta and almonds. Drizzle the dressing over the salad, toss well and serve.

Hello!
Strawberries are in, and now is the time to take full advantage of their goodness! These strawberries are grown right here outside of Nashville by Drury Family Farm and Rocky Glade Farm, and are grown organically. which means they are a perfectly healthy choice for your family! They are picked ripe and ready to eat! Stock up for winter by freezing or making jam. Yum!! There is nothing like strawberry time!
This week we also have a nice selection of greens for you – lots of salad fixins. The flowers are also in, so treat yourself to some beautiful flowers straight from the farm. If you have signed up for the Pre-Paid bouquets, please place your order in the “Pre-Paid Bouquet” box on the Market page.
We still have a nice selection of tomato and basil plants available for your garden. More of the classic pesto variety ‘Genovese’ as ready this week. but if your haven’t yet, please do try a lemon or lime basil ! The flavor and smell are amazing!
There of course is a fabulous selection of cheeses up, and Dozen bakery’s delicious, fresh baked artisan bread – the baguette and the country loaf.

DeForest Locally Grown Market News
Welcome to the 2015 season of DeForest Locally Grown. And Thank you again to Forest Run Farm for hosting the Pick up site at their farm on Mueller Road. This year will include Rusty Dog Coffee. Rusty Dog offers small batch roasts of 100% Arabica blends. Bauman’s Natural Meats will also be offering their products on certain weeks beginning May 17: Brats, Burger patties, bulk burger and Pork Ribs for the Memorial Weekend holiday.
Forest Run Farm will have its first offerings from the fields and hoop house: small head lettuce, spinach, baby bok choy, asparagus, rhubarb and herbs. In the next few weeks the selection will increase. Forest Run Farm also offers vegetable plants for your garden—all started at the farm and grown organically. They are not listed this week but can be picked up at the Farm on Fridays or at Hilldale Market. The selection of plants includes tomato, peppers, herbs, kale, lettuce, kohlrabi, and broccoli. Note: Plants can not be purchased using the CSA punchcard.
Orders made this week (Starting Sunday evening till Tues at midnight) can be picked up on Friday at the farm from 4-6pm until Memorial Day. Then, after Memorial Day, it is extended to 3-6pm.
Note to CSA customers:
1. CSA customers can use their punchcards at the Hilldale Farmers Market on Wed. or Sat.for Forest Run Farm veggie and fruit products.
2. Only Forest Run Farm vegetables and fruit can be paid for with your CSA punch card. Plants, eggs and coffee must be paid for in cash or check made out to Forest Run Farm LLC.
3. The CSA plan is flexible, don’t feel you have to order every week, but be sure to use your punch card before it expires!
4. If you are interested in signing up for a Farmstand CSA share please do so in the next two weeks.

How to use lovage
• Cook with lentils- saute a few leaves with onions, add lentils and cook slowly.
• Chop the leaves and add to cream cheese—use as a stuffing in a chicken breast.
• Pesto is traditionally made with basil, but can be made with most herbs. I use sorrel and lovage.
• Lovage, chopped finely, can be used on a pizza topping.
• Lovage is excellent with fish, such as salmon
• Chop the leaves in a fresh leaf and herb salad- dress with your favorite dressing.

It’s planting time! Bee Well Gardens continues this week to expand their plant offerings for your garden. They are also introducing beautiful flower arrangements that come in a quart jar, ready to place in your home or give as a gift. Think birthday, graduation, gift for the host, or just to say I love you!
Beyond Organics is offering bok choi and turnip greens this week.
Green Fork Farm has oregano available in bunches, plus red mustard greens, mixed braising greens, and mixed lettuces. Shiitakes are also back.
Also available for pre-order this week:
Vegetables—Green onions, lettuce, kale, swiss chard, turnip greens, mustard greens, bok choi, mixed braising greens, radishes, and gourmet salad mix.
Mushrooms—Fresh log-grown shiitakes.
Herbs—Sage, mint, cilantro, lovage, fennel, oregano, and mixed herb bunches.
Eggs—Pastured chicken and duck eggs (half and whole dozen).
Meat—Pastured chicken and lamb. Diamond T Meats is taking the week off but will be back with pork next week.
Fermented foods—Sauerkraut and jalapenos.
Baked goods—Sugar cookies and chocolate chip cookies (some made without wheat flour).
Salsa—Made with locally grown and organic ingredients.
Jam—Blueberry, made with organic, locally grown blueberries sweetened with fruit juice.
Olives and olive oil—organic and directly from the grower in California.
Bath and Beauty products—A variety of botanical soaps.
Plants and Flowers—Culinary, medicinal, and pollinator plants, as well as ready-made flower arrangements.
Place your order from now until Tuesday at noon for pickup on Wednesday 4-7 pm at Nightbird Books in Fayetteville.
If you aren’t able to place an order, stop by to shop with us on Wednesday. We will have a variety of items for sale from the table.

We are a small 14 acre family farm located just down the street in Statham, Ga. We specialize in non-gmo, non-soy, pastured poultry & eggs. We also grow many types of small fruits and vegetables with non-certified organic methods. Featured is the “Back in Time bird” raised the old fashioned way.

Workshops
Join us for a workshop! You’ll be amazed by the plethora of information and lessons offered by our fantastic workshop instructors. Our workshops cover subjects such as gardening, nutrition, nutrient dense foods, natural remedies, essential oils, and much more!
Our goal is to host one workshop a week which will always be on Tuesday. The workshop schedule will rotate from 10:30 AM, 6:00 PM and 7:00 PM for the community’s convenience. The farm brings workshops to the community as an outreach to share the wealth of knowledge we have attained over the years. We do not charge for these events but allow the speakers to charge a fee to cover their time and supplies. We hope everyone will take advantage of this wonderful opportunity.

Happy Mother’s Day to all our mothers out there. We appreciate everything you do especially feeding your family locally grown and made products.
Botanical Harmony is taking a break this week.
Cedar Thicket Farm is back on the market with fresh dill, oregano, cilantro and fresh or dried chamomile for tea. Three types of peonies: pink, white and the famous Sarah Barnhart.
Rainbow Hill Farm has added some kale and garden plants to the Market this week.
Strawberries are available in abundance this week from both Rainbow Hill Farm and Rocky Glade Farm. Rocky Glade Farm has also added carrots and kale to the Market.
There are plenty of other products available this week. Browse the categories to see what your will find.
