Farm to Table Recipes

Aztec Chicken Salad


Be it known far and wide that this recipe has been used to the point of abuse in the Horton household. It has served many groups, parties, and special occasions and has been replicated by many people in many places many times over the years. It’s one of two dishes Mama Roz won’t become famous for.

This recipe is very forgiving and can be adapted for conventional or organic consumption. Notes about substitutions are included


SALAD INGREDIENTS
2 boneless chicken breasts, baked, cubed and cooled
*Dark meat or canned chicken may be substituted
*Mama Roz likes to bake the chicken with cumin
1 head of iceberg lettuce, shredded or torn.
*Substitute one bag of lettuce or two heads of Romaine lettuce
3-4 Roma tomatoes chopped
*Other type tomatoes will work if Roma is not available
1 bundle scallions chopped
*a small onion finely diced may also be used.
1 can black beans, drained and rinsed
1 can whole kernel corn, drained

DRESSING
1 bottle Catalina dressing mixed with Louisiana Hot Sauce. Mix the ratio to suit your individual taste

Lightly toss salad ingredients with the dressing. Serve immediately with corn chips.
Peppers are optional
A light sprinkling of cheese is optional

NEWS AND NOTES

Frontier Family Farm has added asparagus to the market. Look for more new vegetables from Michael as the season progresses.



Solace Farm has added several types of linguine and fettuccine pastas to the market.



Dogwood Valley Greenhouse perennial and herb plants are very beautiful, and now is a good time to set them into your garden. We also have a selection of herb plants available at Square Books. If you’d like to see something special before purchase, please drop us a note. Also check out the vegetable and flowering plants from White City Produce & Greenhouses.



Remember to look for wonderful early spring vegetables, delicious pork and beef cuts, fresh and dried herbs, rich creamline milk, organic free-range eggs, jams and jellies. Please take note of our great selection of hand crafted farm products, candles, essential oils, bath & beauty products, and house & garden plants.

IMPORTANT ORDERING AND PICKUP INFORMATION

Ordering will be open until TUESDAY at 10 p.m., and your order will be available for pickup on THURSDAY between 4:00 and 5:30 at Square Books, 113 East Main Street, Manchester. We can also hold your order in the refrigerator till Friday, if it’s more convenient for you to pick it up between 10:00 am and 2:00 pm. If you prefer to utilize this free service, please make a note on your order or call my cell at (931) 273-9708. If neither of those pickup times works for you, please make a note on the order, and we will work out an alternative arrangement.

The On-line Market will re-open for orders on June 8th and orders can be picked up on June 15 at our NEW Wednesday Farmers Market at Town Park!! We’re so excited to be adding on the Wednesday Market, giving you an extra opportunity for shopping with your local farmers!

The Wednesday Farmers Market hours will be from 4-7 and the on-line pickup will be from 5-7.

Augusta Locally Grown:  THE ON-LINE MARKET IS OPEN AT AUGUSTA LOCALLY GROWN!


SAT, MAY 7 – “FOOD AS ART” GALA AT THE DAVIDSON FINE ARTS SCHOOL REUNION.
ALG is honored to play a small part in helping with this very special locally-grown-themed event! Hugs to ALG board member Kisha Burke for her leadership on this, and to Helms College chef Erica Chaney for always seeing local food as art!

SAT, MAY 7 – COOK-OUT AT THE SUMO ROBOT LEAGUE COMPETITION WITH HACK AUGUSTA
About 50 youth will compete in the Sumo Robot League competition this weekend at the Clubhou.se in Augusta, and G.R.O.W. Harrisburg will be serving up local burgers with local veggie fixings for these kids and their families. We at ALG love “unlikely partnerships” such as these; they provide such funs ways to promote our Augusta Eats Local campaign!

TUE, MAY 10 – VEGGIE TRUCK FARMERS MARKET
Come pick up your farm-fresh goods at the only farmers market in Richmond County that DOUBLES EBT. Newcomers will be welcomed with a $5 token to spend at the market through our My Market program. Come be a part of this transformational initiative that we call G.R.O.W. Harrisburg! The farmers market is located at 1850 Broad Street, across from the Kroc Center. The market is every Tuesday and runs through October. Market hours are 4:30pm-7pm.

WED, MAY 11 – ALG AT THE BULBS AND BORDERS GARDEN CLUB – We are honored to share the good news of local foods with this group in Augusta!

THU, MAY 12 – ICEBOX URBAN FARM, HOMESCHOOL GROUP VISIT – Hundreds of volunteers have put in thousands of hours to bring this whimsical urban farm campus to life! We are so lucky to work with Icebox Ministries on the next stage … creating science-based, garden-based curriculum for groups like this!

TUES, MAY 17 – ALG AT THE WOMENS GUILD – We are honored to share the good news of local foods with this group at Sacred Hearts Cultural Center!

WED, JUNE 1 – SIBLEY SOILWORKS SERVICE LEARNING PROJECT BEGINS

SUN, JUNE 5 – FARM TOUR DAY AT CLYDES FRESH PRODUCE IN GROVETOWN
Come meet the people who grow your vegetables! Free entry includes a farm tour, 2pm-6pm. Buy produce to take home, and a picnic dinner to enjoy on the farm. Save the date!

TUE, JUNE 7 – FVRx KICK OFF COMMUNITY MEAL!!!
ALG is so lucky to again work with our amazing community partners for a second-year pilot of our Fruit & Vegetable Prescription program, otherwise known as “FVRx-Augusta.” This is one of our dozen G.R.O.W. Harrisburg initiatives! The program is hosted by Harrisburg Family Healthcare and enrolls 30 women from the neighborhood to participate. It is funded by Wholesome Wave Georgia and Good Neighbor Ministries; studied by Emory’s School of Public Health; Icebox Ministries provides cooking classes; MCG students provide market management and clinic support; Veggie Truck Market farmers provide nutrition education and sell their wonderful fruits and veggies through this program; Helms College students, the Augusta District Dietetic Association volunteers and the American Culinary Federation of Augusta help with cooking demos; St. Luke UMC provides transportation; the Junior League provides kids activities; Georgia Organics supports our outreach! Wow! Team awesome!!!

MON, JUNE 13 – KEYNOTE FOR THE AMERICAN CULINARY FEDERATION OF AUGUSTA, ANNUAL EVENT – Wow! How fun (and just a “little” intimidating) is this!? Grateful for the opportunity.

TUES, JUNE 14 – SUMMER MEAL PROGRAM KICK-OFF FOR KIDS IN HARRISBURG – The Veggie Truck Farmers Market will create a picnic-like atmosphere every Tuesday, serving dinner to youth in the community weekly at 5pm. This program will be managed in cooperation with the Richmond County Board of Education School Nutrition Program. The summer meal program is an extension of the free lunch program served throughout the school year. Local groups – St. Luke UMC, Good Neighbor Ministries, Icebox Ministries, the RCBOE and ALG – will work with regional groups – Georgia Food Bank Association and Wholesome Wave Georgia – to make it happen through July. We’re gonna need all kinds of volunteers, so if you can help on Tuesday afternoons this summer, please contact [email protected].

SAT, JUNE 18 – BLUEBERRY PICK YOUR OWN EVENT AT HERB ‘N BERRIES FARM IN MONTMORENCI, SC

SAT, JULY 16 – CHOCOLATE MAKING WORKSHOP WITH THE ANTEBELLUM CHOCOLATE COMPANY IN AIKEN, SC
Spend your Saturday evening making your own chocolate bars with your choice of ingredients – many of them local – with Antebellum Chocolates in Aiken. Learn the history and fundamentals of chocolate, make the bars, and feel the love. $25/person includes your take-home tray of bars. 5pm-6:30pm. My Daily Bread


Bruce has certainly had some major health challenges the last month and now he faces open heart surgery. The situation is best told by Dabrielle:

“For those who don’t know yet, Bruce is in the hospital awaiting open heart surgery.

He passed out at Suwanee market and fell to the concrete suffering a 4 inch gash to his heat, a concussion, and lots of bruising. When all the confusion was sorted out by the caridologist, he actually had stopped breathing and his defribulator went off 4 times to shock him back.

After a heart cath, they discovered a calcified block directly from his aorta to the large portion of his arterial feed that is 80% blocked and cannot be stinted. The only option is open heart surgery.

They are awaiting the Plavix to leave his system so they can operate. He will have a long road to recovery including a month bed rest and 3 of cardiac rehab.

They are hoping to do the surgery on Monday, but may be able to do it on Friday if things move faster with the Plavix.

Bruce LOVES doing the coops and I know he will miss you all, but he is grounded for awhile.

We will do our best to get back up and running after his surgery.

Prayer is powerful and I join in Dabrielle’s request for your prayers for Bruce as well as for Dabrielle and their son, Brandon. I will keep you informed about Bruce’s condition and recovery.

Ancient Awakenings


I am absolutely addicted to the Coconut Vanilla/Banana Kefir and the Grape Kefir and I hope you all have found your favorites as well! Originally when we started with these great folks, their products were being delivered by one of our other Farmers. It hasn’t worked out quite the way we thought it would. In an effort to keep

Ancient Awakenings’ products, we had to come up with a ‘work around’! Right now, the best we can do is a once a month delivery which will be the first Market of each month. However, so that we can all stock up on their wonderful fermented products, Dana and Steve do have items listed on Market this week. PLEASE order what you will need until our next delivery on June 2nd! We hope to go back to a weekly delivery at some point, but in the mean time, I am grateful that we can still get their products!


I will be sending a Newsletter out this weekend to let you know other happenings with the Market! Thanks so much for your support!
