Heirloom Tomato Salad Caprice

<p>In the short, local tomato season, you need to use them while you&#8217;ve got them! This recipe features great tomatoes, and alot of them.</p>

Serves: 1 tomato per person
Vegetarian!

Ingredients
1 ea Heirloom tomato
1 ea Basil leaf
1 ea Real mozzarella
1 ea Olive Oil, extra virgin
1 ea salt
1 ea cracked black pepper

Step by Step Instructions
  1. Directions: Wash core and slice some heirloom tomatoes, such as German pink, brandywine, green zebra, black krim, chosen for their varied colors. Layer them, alternating colors, with whole basil leaves and slices of real Italian mozzarella (not the American “part skim” kind, the little white balls that come packed in water).
  2. Drizzle this with extra virgin olive oil, a little salt and cracked black pepper, and you’ve just made a classic salad known as “Caprice.”
  3. For a simpler version, simply chop and toss all the ingredients together.
