Feta Mashed Potatoes

Ingredients
6 tablespoons Unsalted butter (cut into cubes, plus more for the dish)
4 pounds Potatoes (Russet if possible, peeled, quartered lengthwise and sliced into 1/4-inch-thick pieces )
2 cups Half and half
Salt & Pepper
7 ounces Feta cheese
1/2 cup Sour cream
1 tablespoon Chopped fresh chives

Step by Step Instructions
  1. Preheat oven to 400 and grease a 9-by-13-by-2-inch casserole dish with butter.
  2. Put the potatoes into the casserole dish, then add the half and half and stir them together. Spread the mixture out into an even layer and put the feta on top in the center.
  3. Season with salt and pepper, then evenly distribute pats of butter across the top. Cover the dish with aluminum foil and bake for 1 hour and 20 minutes
  4. Remove the foil and mash the contents of the casserole dish with a potato masher until well combined. Stir in the sour cream and more salt and pepper to taste.
  5. Cover the casserole dish with foil again and bake for 10 more minutes. Serve warm and topped with chopped fresh chives
