Sweet Potato and Star Fruit Chaat

Ingredients
1 pound
Sweet potatoes (peeled and cut into 1/2 inch cubes)
1
Star fruit (sliced)
1 to 3
Jalapenos (or other green peppers) (finely chopped with seeds)
Juice from 1/2 of a lemon
1 teaspoon
Chaat masala spice mix
1/2 teaspoon
Roasted ground cumin
1/2 teaspoon
Chili powder
1/8 teaspoon
Kosher salt
TOPPING SUGGESTIONS INCLUDE:
Tamarind chutney
and/or mint-cilantro chutney
Chopped fresh cilantro
Pomegranate seeds
Step by Step Instructions
- Put the sweet potato pieces into a medium-sized saucepan and add enough cold water to cover them. Bring the water to a boil over medium-high heat.
- Reduce the heat to a simmer and let the sweet potatoes cook for 5 minutes to become tender. Drain the pot and put the sweet potatoes into a large bowl.
- Add the star fruit, jalapenos, lemon juice, chaat masala, cumin, chili powder and salt. Mix until well combined.
- Drizzle with chutney and top with cilantro and pomegranate seeds. Serve warm or at room temperature.
