Shiitake Steamed Buns

Serves: 6 buns
Vegan!

Ingredients
1/4 cup Soy sauce
2 tablespoons Rice vinegar
1 tablespoon Light brown sugar
1 large clove Garlic (minced)
8 ounces fresh shiitake mushrooms (stemmed and sliced)
1 pound Prepared pizza dough
Vegetable oil (for greasing)
Sesame seeds (for sprinkling)
For serving:
Cucumber (Julienned)
Carrot (Julienned)
Scallion (Julienned)
Hoisin sauce

Step by Step Instructions
  1. Whisk the soy sauce, vinegar, brown sugar, and garlic together in a bowl. Add the sliced mushrooms and gently toss them to coat. Let them marinate in the mixture for 15 minutes, then drain and discard the marinade liquid.
  2. Cut the dough into 12 (11/4-ounce) pieces. Dip fingers into the oil to prevent sticking and gently shape the dough into balls (do not press out the air). Sprinkle the dough balls with sesame seeds and put the balls onto a plate.
  3. Pour 1 inch of water into a pot and bring to a simmer over medium heat. Line 2 baskets of a 2-tier, 91/2-inch round steamer with parchment paper.
  4. Spread the marinated mushrooms into one of the baskets and fit it into the pot. Put the dough balls into a the 2nd basket and fit it on top of the first basket. Cover and steam for 15 to 20 minutes.
  5. Remove the mushrooms and dough balls from the baskets, carefully split each of the dough balls open leaving one end attached.
  6. Evenly fill the buns with the mushrooms, top them with the Julienned vegetables, and serve them with a side of Hoisin sauce for dipping.
