Feta Grilled Cheese With Honey

Ingredients
4 slices
Bread (original recipe suggests sourdough)
1/2 cup
Feta cheese (crumbled)
1/2 cup
Anthotyros cheese
OR Ricotta
1/3 cup
Kefalotyri cheese
OR Pecorino Romano cheese (grated)
4 teaspoons
Salted butter
1/2 cup
Honey
1 or 2 sprigs
Fresh thyme
Step by Step Instructions
- Butter the bread slices on both sides. Heat a skillet over medium-high heat and toast the slices on both sides until golden.
- Mix the cheeses together while the bread cooks. Heat the oven to 390 degrees.
- Spread the cheese mixture over 2 of the slices and top them with the other 2. Wrap both sandwiches with parchment paper and press down the slices lightly. Bake the slices in the oven for 15 to 20 minutes.
- While the sandwiches cook, mix and heat the honey and thyme in a saucepan over low heat.
- Serve the sandwiches warm, sliced, and topped with honey & additional thyme leaves for garnish.
