FOR THE VINAIGRETTE:

Grapes
1 teaspoon
Honey
1/4 teaspoon
Sea salt
1 tablespoon
White wine vinegar
1/2 cup
Canola oil
FOR THE SALAD:
3 small
Peppers (thinly sliced)

Okra (thinly sliced)

Squash (thinly sliced)

Cherry tomatoes (cut in half)
1 or 2 larger
Tomatoes (cut into wedges)
Lettuce
Goat cheese
Step by Step Instructions
- Cut the grapes in half, remove the seeds, and squeeze out the grape innards. Put the grape skins and half of the grape innards into a food processor. Set the other half aside.
- Add the honey, salt, and vinegar to the food processor and puree until smooth. Slowly add the canola oil while the machine is running to let it emulsify.
- Pour the vinaigrette over the remaining grapes and mix to combine.
- Combine and toss the lettuce, peppers, okra, squash, and tomatoes with the vinaigrette, season them with salt & pepper, and top the salad with cheese
