Steamed Clams in Garlic Butter

Ingredients
1/4 cup Butter
1 tablespoon Garlic (minced)
1/4 teaspoon Red chili flakes
1 cup White wine
4 pounds Fresh clams (cleaned)
Salt & Pepper to taste
1 tablespoon Lemon juice
1/4 cup Chopped fresh herbs such as:
Parsley
Chives
And/or basil
For Garnish:
Lemon wedges
Sprigs of fresh herbs

Step by Step Instructions
  1. To clean the clams: Discard any with chipped shells. Put the clams into a bowl and add enough water to cover. After the clams soak, discard the water and gently scrub the clams with a soft brush.
  2. Heat a large pot over medium heat, then add the butter to it and melt it. Add the minced garlic and the red chili flakes and stir them into the butter.
  3. Add the wine and bring the mixture to a simmer. Put the clams into the pot and season them with salt and pepper. Let them simmer for 7 to 9 minutes.
  4. Discard any clams that did not open during the cooking process. Serve the remaining clams garnishes with lemon wedges and sprigs of fresh herbs.
