Ingredients
2 teaspoons
Olive oil
1/2 cup
Bell pepper (chopped)
1/3 cup
Onion (chopped)
3 cups
Kale (chopped)
2 teaspoons
Garlic (minced)
1 teaspoon
Curry powder
1/2 teaspoon
Ground ginger
1/2 teaspoon
Salt
1/4 teaspoon
Pepper
1 tablespoon
Creamy peanut butter
1 1/2 cups
Unsweetened refrigerated coconut milk
1 cup
Chickpeas
1 tablespoon
Lime juice
1 cup
Cooked quinoa
2 tablespoons
Fresh cilantro sprigs
Step by Step Instructions
- Heat the oil in a skillet over medium heat and cook the onion and pepper stirring for 5 minutes, then add the kale and garlic and cook stirring for 2 minutes.
- Add the curry powder, ginger, salt, and pepper and stir to mix them in. Add the peanut butter and stir constantly for 30 seconds.
- Stir in the coconut milk and chickpeas and let cook (stirring occasionally) for 12 to 14 minutes. Remove from heat and stir in the lime juice.
- Serve the curry over quinoa and topped with fresh cilantro.
