Green Bean Casserole

Ingredients
FOR THE TOPPING:

Onions (thinly sliced)

FOR BEANS & SAUCE
2 tablespoons

Green beans (rinsed, trimmed and halved)
2 tablespoons
Unsalted butter
12 ounces
Mushrooms (trimmed and cut into 1/2-inch pieces)
1/2 teaspoon
Pepper
2 cloves
Garlic (minced)
1/4 teaspoon
Nutmeg
2 tablespoons
Flour
1 cup
Chicken broth
1 cup
Half & Half
Step by Step Instructions
- Preheat oven to 475 degrees. Put the onions, flour, panko and salt into a bowl, then toss to combine. Coat a sheet pan with the nonstick cooking spray, then spread the breaded onions evenly across it. Bake for 30 minutes, tossing the onions 2 or 3 times throughout the cook time. Remove from oven, set aside, and reduce the oven's heat to 400 degrees.
- While the onions cook, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in a saucepan. Add the beans and blanch them for 5 minutes, then drain them and put them into a prepared bowl of ice water. Drain the bowl and set the beans aside.
- Melt the butter over medium-high heat in a cast-iron skillet. Add the mushrooms, 1 teaspoon salt and pepper and cook for 4 to 5 minutes, stirring occasionally. Add the garlic and nutmeg, then let cook for 1 or 2 more minutes. Sprinkle the 2 tablespoons of flour over the top of the mixture, then stir it in. Add the chicken broth and simmer for 1 minute. Reduce the heat to medium-low, then add the half & half. Let cook for 6 to 8 more minutes, stirring occasionally.
- Remove from the heat, then stir in the green beans & 1/4 of the onions. Top with the remaning onions and bake in the oven for 15 minutes. serve hot.
