Ginger Sesame Cucumbers

Ingredients
1 1 inch piece
Fresh ginger (peeled)
1
Cucumber
1/2 of a
Sweet onion (thinly sliced)
1/4 cup
Apple cider vinegar or rice wine vinegar
3 tablespoons
Packed brown sugar
3 tablespoons
Soy sauce
2 tablespoons
Olive oil
1 tablespoon
Toasted sesame oil
1 teaspoon
Salt
1/2 teaspoon
Crushed red pepper flakes
Step by Step Instructions
- Slice the ginger thinly, then stack them up and cut them into even thinner matchsticks. Cut the cucumber in half lengthwise, then slice it into thin half-moon shapes.
- Place the ginger, cucumber and the onion in a medium bowl. Add the vinegar of choice, the brown sugar, soy sauce, olive oil, sesame oil, salt, and crushed red pepper flakes and toss to mix.
- Cover the mixture and refrigerate it for 1 hour. Serve cold.
