Deep-Fried Chicken Feet

Ingredients
1 pound
Chicken feet
1 teaspoon
Salt
2 tablespoons
Soy sauce
1 tablespoon
Sugar
3 cloves
Garlic (smashed)
1 stick
Cinnamon
2
Eggs (beaten)
1 cup
Flour
1 teaspoon
Salt
1 quart
Oil for deep frying
Salt (for serving)
Step by Step Instructions
- Clip the nails from the feet. Wash the feet and remove and calluses & loose excess skin.
- Place the feet in a 2 quart saucepan and add enough water to cover them. Add the salt, soy sauce, sugar, garlic, and the cinnamon stick. Bring the water to a boil then reduce to a simmer and cook for 1 1/2 to 2 hours. Remove the feet from the mixture and allow them to cool.
- While the feet cool, whisk the eggs, flour, and salt together. Dip the feet into the flour mixture until fully coated.
- In a wok, bring the oil to 375 degrees. Fry the feet in batches for 3 to 5 minutes each batch. Serve immediately, season with salt to taste.
