Grilled Goat Cheese Sandwiches with Tomato & Basil

Ingredients
1 16 ounce
Baguette
2/3 cup
Olive oil
8 cloves
Garlic (finely chopped)
1/2 cup
Fresh basil (chopped)
1 tablespoon
Mixed fresh herbs such as:
Tarragon
Thyme
and/or Rosemary
3/4 cup
Soft goat cheese (flavored or plain)
2 cups
Mediterranean olives (coarsely chopped & pitted) (optional)
4 large
Tomatoes (thinly sliced into rounds)
Step by Step Instructions
- Prepare barbecue (medium heat). Cut Cut baguette crosswise in half, then cut each half lengthwise (you should wind up with 4 slices at this stage).
- Combine the olive oil, garlic, basil, and herbs of choice in a bowl. Divide the oil mixture into halves. Brush all sides of the 4 bread slices with one half of the mixture. Set the other half aside.
- Grill the bread cut side down for 1 minute. Remove them from the grill and add the cheese, tomato, and olives if using. Drizzle the remaining oil mixture on each slice.
- Place the slices back onto the grill to cook the bottom sides for about 3 minutes. Either serve as open-faced sandwiches or stack the pieces together and slice diagonally in half before serving.
