Mixed Bean and Bell Pepper Burger

Vegan!

Ingredients
1 small Bell pepper (finely chopped)
1/2 of 1 small Jalapeno (finely chopped)
1 small Onion (finely chopped)
2-3 cloves Garlic (finely minced)
1/2 cup Spinach (wilted, chopped, and excess water squeezed out)
1/2 cup Black beans
1/2 cup White beans
1/2 cup Chickpeas
1/4 cup Walnuts (or other nuts) (chopped)
1/2 to 3/4 cup Rolled oats
2-3 tablespoons Breadcrumbs
1 teaspoon Chili powder
1 teaspoon Ground cumin
1 teaspoon Dried oregano
1/2 teaspoon Red chili flakes (optional)
1 tablespoon Cilantro (finely chopped)
1 tablespoon Egg replacer (whisked with 3 tablespoons of water ()
Salt and pepper to taste
Lettuce for topping (optional)
Tomato for topping (optional)
Pickles for topping (optional)
Sliced onions for topping (optional)
Peppers for topping (optional)
Bread for serving
Olive oil for cooking

Step by Step Instructions
  1. Heat 1 tablespoon of olive oil in a pan and saute the onions, garlic, jalapeno, red pepper, and spinach until the onions are translucent. Add the chopped nuts and saute for 2 more minutes. Remove from the pan and allow to cool.
  2. In a mixing bowl, mash the beans, leaving a few whole for texture. Add the saute mixture, oats, breadcrumbs, chili powder, cumin, dried oregano, chili flakes, and cilantro. Season with salt & pepper, then mix well. Add the egg replacer, then shape the mixture into patties. Place the patties on a baking sheet and refrigerate for 30 minutes.
  3. Heat 1 tablespoon of olive oil in a pan and place the patties in gently and cook for 2 to 3 minutes per side. Serve with toppings of your choice.
