Hearty Vegetable Stew

Ingredients

Olive oil

Onion (diced)
2 stalks
Celery (thinly sliced)
2
Carrots (thinly sliced)
6 cloves
Garlic (minced)
Pepper to taste
1 tablespoon
Fresh rosemary (finely chopped)
1 tablespoon
Fresh thyme (finely chopped)
1 tablespoon
Fresh sage (finely chopped)
1/4 cup
Flour
1/4 cup
White wine
4 cups
Vegetable broth
2 cups
Sweet potato cubes
4
Small potatoes (cubed)
2 tablespoons
Tomato paste
1 tablespoon
Soy sauce
1 tablespoon
Nutritional yeast
1 teaspoon
Liquid smoke
1 teaspoon
Marmite
1 cup
Peas
2 tablespoons
Red wine vinegar
Salt to taste
Step by Step Instructions
- Add the oil to a pot over medium heat, then once heated add the onion, celery, and carrot. Cook for about 8 minutes, stirring occasionally. Add the garlic, pepper, and fresh herbs. Cook for 2 more minutes.
- Coat the vegetables in the pot with flour, then cook for about a minute, stirring constantly. Slowly add the white wine and vegetable broth, still stirring constantly.
- Add the the potato, sweet potato, tomato paste, soy sauce, nutritional yeast, liquid smoke, and marmite to the pot. Bring the stew to a boil, then reduce it to a simmer
- Cook the stew uncovered for 20 to 30 minutes, then add the peas and vinegar and cook for 5 minutes more. Serve hot!
