Southern-Style Collard Greens

Ingredients
2 pounds Collard greens
1 Ham hock
1 Medium sized Onion
1 teaspoon Crushed red pepper flakes
2 teaspoons Salt
Pepper to taste

Step by Step Instructions
  1. Rinse the collard greens, then cut the stems out of the leaves. Either discard the stems or chop them into small pieces to include them in the recipe. Stack the leaves up, roll them up, then slice them into strips.
  2. Place the collard greens into a stockpot or Dutch oven. Rinse the ham hock and pat it dry before adding it in with the greens. Peel the onion then cut it up and add it and the red pepper flakes and salt to the pot as well.
  3. Add enough water to the pot to cover the greens, then cook for 1 hour. Add salt and pepper as desired.
