Mocha Icing

Serves: About 1 1/4 cups
Vegetarian!
Ingredients
1 2/3 cups
Confectioner's sugar
1 or 2 tablespoons
Cocoa
1/4 or 1/2 cup
Butter
1/8 teaspoon
Salt
3 tablespoons
Your favorite blend of hot coffee
1 teaspoon
Vanilla or almond extract (or rum if you prefer)
Step by Step Instructions
- Sift the confectioner's sugar and the cocoa and set them aside. Beat the butter until it is soft and add the sugar and cocoa gradually until the mixture is creamy.
- Add the salt and hot coffee to the butter mixture and beat for 2 minutes. When the icing has cooled add either the vanilla or almond extract or rum.
- Let the icing stand for 5 minutes. Beat well and spread.
