• Hello, Virtual Market customers, from Swisher Hill herbs. It is a new year, this is the ?me of year when we
all can start with a clean slate. Set goals and resolutions, more exercise, eat better, read more, help
others, sometime, the list is long. The CDC and FDA ‘s salt consumption guidelines for the public
recommended 1 teaspoon of salt a day. This is not an impossible lifestyle change to achieve, but we know cutting back on salt results in some foods being blah and lacking *flavor. Thus, you reach for the Salt.
We have been experimenting with recipes using our salt-free herbs, spices and seasoning blends. All the
recipes will use low and no sodium ingredients. Our pantry is stocked low or no sodium products. This
year we will attach a recipe to every order
Last year we introduced our All-Season Salt Substitute to the Virtual market last year. We are offering,

What We’re About
Recently someone asked my why our Market does not have (insert fruit or vegetable product) like some of the roadside vendors they drive by on a regular basis. They thought it strange those people would offer certain food items that we do not. It got me to thinking about our core values: Fresh, Local, Sustainable and Year Round.
While roadside products may appear FRESH, (as opposed to overripe or poor quality), sometimes that’s not the case as many items can be refrigerated an extended time or ripened with gasses before being put on display for sale. They are seldom LOCAL. More often than not, they have been purchased from a wholesaler who got vast quantities by truck from down in Florida. If not there they’ve probably been hauled off a boat from Central America. These too have been subject to refrigeration, spray, dye or gasses. Market at Dothan limits our distance to within fifty miles of Dothan, ensuring that the food you purchase from us is truly LOCAL. As far as FRESH, it is usually picked 1-2 days before pickup on Fridays.
The other issue is SUSTAINABILITY. Sustainability is all about growing food without depleting natural resources. The nutrients taken from the soil by crops must be replaced using natural methods. The USDA defines sustainable farming as agriculture that:
*Enhances the natural resources upon which society lives
*Efficiently uses resources by implementing natural controls and biocycles
*Is economically viable
*Enhances life for farmers and those eating the products
The grand hope of sustainable farming is that mankind will be able to continue living off the land without depleting natural resources and ruining the earth. To be sustainable, farmers must also be able to afford their business.

The last core value of Market at Dothan is YEAR ROUND. While it is nice to serve fresh berries during the fall and winter, it is not natural, and it is not necessarily what our bodies need the most. Case in point: citrus in this region ripens and is available most of the winter months. What does citrus offer? Vitamin C. We all know that. And what do we need during the fall and winter months to help fight off colds and flu? Vitamin C, of course. There are other studies showing the value of root vegetables during the cold months as well as leafy green brasseric vegetables which are very popular in the deep south.
The downside of a Year Round Market is unpredictable weather. Those of you who ordered root crops last week experienced the downside of that as our recent cold snap damaged them severely and has limited what our growers are able to offer this week.

Recipes
Coconut Chicken and Sweet Potato Stew
Serves 8
1/3 cup peeled and thinly sliced fresh ginger (3 ounces)
4 cloves garlic, peeled
2 jalapeño peppers, chopped (seeds removed to reduce heat)
1/4 cup freshly squeezed orange or lime juice
1 tablespoon paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
2 tablespoons water
3 tablespoons peanut oil, divided
1 large onion, coarsely chopped
1 (15-ounce) can diced tomatoes and their juices
1/2 cup roasted peanuts
1/2 cup unsweetened coconut milk
1/4 cup shredded unsweetened coconut, plus more for garnish
2 cups low-sodium chicken broth or stock
1 teaspoon kosher salt, plus more as needed
1/2 teaspoon freshly ground ground black pepper, plus more to taste
1 pound sweet potatoes, peeled and cut into 3/4-inch pieces
2 pounds boneless, skinless chicken thighs, cut into 1 1/2-inch pieces
Serve with: orange or lime wedges, chopped peanuts, chopped cilantro, and cooked rice (optional)
Pulse the ginger, garlic, jalapeños, juice, paprika, cumin, coriander, turmeric, and water in a food processor fitted with the blade attachment until it forms a paste; set aside in the food processor.
Heat 2 tablespoons of the oil in a large saucepan over high heat until shimmering. Add the onions and a pinch of salt and stir to combine. Reduce the heat to medium and cook, stirring often, until softened, about 8 minutes.
Stir in the ginger paste (reserve the food processor; no need to wash) and cook, stirring, until the paste begins to brown, about 3 minutes.
Stir in the tomatoes, peanuts, coconut milk, and coconut and cook, stirring often, until the mixture thickens slightly, about 5 minutes. Transfer back into the food processor and purée until smooth. Return the mixture to the saucepan. (Alternatively, purée it directly in the saucepan with an immersion blender.)
Add the broth and measured salt and pepper. Bring to a simmer and cook for 15 minutes. Stir in the sweet potatoes and cook until tender, about 20 minutes. Keep warm over low heat.
Heat the remaining 1 tablespoon of oil in a large skillet over medium-high heat until shimmering. Season the chicken with salt and pepper. Working in batches to avoid crowding the skillet, brown and cook until the chicken is cooked through and the juices run clear when pierced with a knife, about 8 minutes. Add the chicken to the stew and stir to combine. Taste and season with salt and pepper as needed.
Serve garnished with shredded coconut, orange or lime wedges, peanuts, and cilantro. This can also be served over rice.

Tru Bee Honey makes their own lip balm, using their own beeswax and honey. These feel great on winter lips!
If you enjoyed the sauerkraut we offered this year that was made using Turnbull Creek Farm organic cabbage, we have a new item for you! This week we have a limited run of Radish Sauerkraut.
We are on an every-other -week schedule, so please stock up on items, frozen meats, eggs, and hardy storage vegetables.

Suwanee Whole Life Co-op: SALE! Jun (Probiotic Drink) on certain flavors/batch
Cultured Traditions has put some of their Jun probiotic drinks on SALE. This particular batch was over-fermented and a little more sour and fizzy compared to previous batches. Fermentation is an art and can vary from batch to batch so if you like slightly sour and fizzy this perfect for you!
I personally have taste tested these flavors against a batch that I previous bought a couple of weeks ago and they all taste great but the fruit flavor was not as pronounced. I actually prefer more sour and fizzy and sometimes leave my Jun on the counter for a day to get this effect. Feel free to stock up!!! The sale will end once all of this batch is sold out.
