The market is open. February is going to be a great month to make weekly orders because one customer will be randomly selected each Wednesday to win a free t-shirt from Ratchford Farms! Big thanks to L.C. Ratchford for this great gift for our customers. Be sure to check out his products on the market (we recommend the buffalo jerky – yum!).

Rocky Glade Farm is here this week, which means Dylem and Caleb’s eggs are as well!
They also bring:
Yukina Savoy (Asian green like tatsoi, very mild), Kale, Spinach, Bok Choi, Swiss Chard, Garlic Bundles, Butterkin Winter Squash (you can use this to make butternut soup!), and our last few bottles of honey for this season! (Stock up!)
Stock up on your favorite breads, frozen soups and prepared foods this week for quick, filling meals!
John with Short Mountain Cultures will have a tasting table set up this week. Learn how you can incorporate healthy tempeh and cultured foods into your diet, how to prepare them, and diversify your weekly meals with these incredible offerings!

CLG: Opening Bell: NEW GROWERS, Mushrooms, Coffee, Honey!
Good afternoon!
We are very pleased to announce TWO NEW GROWERS this week!
1. Many of you were lucky enough to meet Joe Calvert from Calvert Enterprises at last market as he was sampling out his delicious sunflower and radish SPROUTS. Look for a variety of outstanding products from this hard-working family.
2. After working out some logistical issues, White River Creamery from Elkins (near Fayetteville) has some of their delicious cow and goat cheeses listed. Limited supply this week, but over the years we will see their inventory grow to keep up with demand. Try something new!

Most items are listed by 6pm Sunday, but check back again before the market closes Tuesday night to see if any other items are ready to be harvested for you! Eat fresh! Eat local! Eat for better health!

NEWS AND NOTES
Kountry Vittles Baked Goods is celebrating their 2nd Anniversary this Week, thank you everyone for you Support. I’ve been busy baking lots of cakes, pies and goodies and will be adding more to the list shortly. This past week the most popular item has been my Banana Pudding Pie with it’s Nilla wafer crust and ole fashioned homemade pudding mixed with lots of banana slices and more Nilla wafers inside. It’s topped off with a generous portion of Meringue and baked to perfection. Next runner up has been the Ole fashioned Coconut Cream Pie topped with Real Whipped Cream. Just can’t beat those ole Timey recipes. Back to baking everyone have a Blessed Day.

My work travel schedule has prevented listing of Sow’s Ear Piggery premium pork products for a few weeks. We’re back on the market this week and hope to make up for the absence with special pricing across the board. All of our products are listed below $4/pound this week. With the return of winter weather, pork is a versatile entrée for comfort food prepared indoors on chilly January nights. Braised, baked, pan fried, or in stroganoff or goulash, pork from the oven hits the spot!

Note: Our pigs are raised outdoors in the fresh air and sunshine, graze clover and native grasses, forage on acorns and persimmons in season, and are also fed non-corn, non-soy, non-GMO feed (pellets of milo, black oil sunflower seed, and wheat) and fresh fruit and vegetables. They are happy, docile, friendly animals who enjoy a good life and re-pay us in natural, non-antibiotic, non-hormone meat and lard for frying and baking. Our pork is nicely marbled and sweet flavored.
IMPORTANT ORDERING AND PICKUP INFORMATION
Ordering will be open until TUESDAY at 10 p.m., and your order will be available for pickup on THURSDAY between 4:00 and 5:30 at our tents located outside Manchester Farm Store, 251 Interstate Dr., Manchester.
We can also deliver your order to your home (or other location) on Friday afternoons, for a small fee, if it’s more convenient for you. If you prefer to utilize this service, please place an order for it, same as other products, selecting your delivery area. Don’t forget to give us your location address in the comments section of the order. Also please text Linda at (931) 273-9708 for specific arrangements.

Duette, FL: Kale and Strawberries
This week we are featuring our three kinds of kale. Lacinato, Red Russian and Siberian kales are delicious.
We offer strawberries in pint or quart clamshells.
Place the kale in the steamer basket in the pot and cover with a tight-fitting lid. Cook with the lid on for 2-5 minutes. Serve. Italians steam kale until tender, then add olive oil, a little garlic, breadcrumbs, and sprinkle with Parmesan cheese in the last minute or two of cooking.
You can cook them just as you would collard greens, which is my favorite way to do it. They abound in great nutrients.

Due to the extremely dry winter our cool season grasses that we planted are doing poorly. We are having to supplement the cows with Barley and Peas.
We have decided that is the best route to go to keep the milk and health of our cows up. We will not feed any soy, corn or any of the fillers in feed such as cotton seed or rice hulls.
The cows will continue to get most of their diet from Hay (local and premium non GMO Alfalfa) Haylage and pasture.
